TEM images of the gastrointestinal digestion products in the gastric and intestinal digestion fluids with different bile salts concentrations. SAXS patterns from the gastrointestinal digestion mediums prepared with different bile salts concentrations, the starting bile salts solution, and a solution of the pancreatin added during the intestinal phase.
