Sumario:Non-celiac gluten sensitivity is, along with celiac disease and wheat allergy, a disorder caused by gluten consumption. Currently, there are no biological markers to diagnose this disease, and its symptoms often overlap with those experienced in other gastrointestinal pathologies, such as celiac disease and irritable bowel syndrome. This narrative review summarizes and analyzes the latest studies conducted in relation to the pathophysiology of non-celiac gluten sensitivity and its symptoms. It explores the existing debate about whether the only causative agent for non-celiac gluten sensitivity is gluten, or there are another components involved such as FODMAPs, amylase inhibitors or histamine. Also, the latest advances in determining a reliable diagnostic method are discussed. Finally, it is analyzed if is possible that gluten affects those who do not suffer from any gluten related disorder.
