The introduction is devoted to a description of the SYALS for olive oil in Spain and the competitiveness context in which they are set. The recent strong expansion of the number of PDO olive oils seems to contrast with the lack of renown of the oils and the small differentiation return from PDOs. The main part of the work concerns the territorial analysis of the governance processes implemented by the PDOs, resulting in the development of sectoral governance relations in local oil production chains and in the creation of positive territorial, socioeconomic and cultural externalities and also in its contribution to the reduction of negative environmental externalities.L’objectif du travail est l’analyse des potentialités des Appellations d’Origine Protégée (AOP) d’huile d’olive en Espagne en tant qu’institutions contribuant à l’amélioration des fonctions économiques et institutionnelles de gouvernance territoriale des Systèmes agroalimentaires localisés (SYAL). Une section introductive de l’article est consacrée à la description des caractéristiques des SYAL d’huile d’olive en Espagne ainsi que du contexte de compétitivité où ils s’inscrivent. Le phénomène de la grande expansion récente du nombre des AOP d’huile d’olive semble s’opposer aux faits de l’absence de notoriété des huiles et de la faible création de revenus de différenciation dans les AOP.
