| Resumo: | Dodonaea viscosa (Chamana) has biological potential due to secondary metabolites presented mainly in theirroot and leaves. The main purpose of this research was to evaluate how the antioxidant capacity presented inthe hydroalcoholic extract Dodonaea viscosa leaves, influences the stability of the vitamin C syrup. Three pilotbatches of ascorbic acid syrup were carried out: 1) free of antioxidant, 2) with natural antioxidant (hydroalcoholicextract) and 3) with synthetic antioxidant (sodium metabisulfite). These samples were subjected to anaccelerated stability study, under the following parameters: 3 months, T: 40 ± 2°C; RH: 75 ± 5%. As a result,the product with the highest API concentration over time was the one containing sodium metabisulfite. On theother hand, the one with the highest antioxidant capacity was the syrup with natural antioxidant. |
