Sumario:The present theoretical study is a systematic review of research related to the encapsulation of bioactive compounds. The aim of the study is to show the efficacy, operating parameters, and the resulting products with the different encapsulation methods. The information search was carried out in Scopus, Google Scholar, and Websites, using the keywords in Spanish/English: encapsulation, emulsion, extrusion, lyophilization, spray drying. The main results of 103 scientific articles, book chapters and fact sheets published between 2003 and 2022 were summarized. The information from the last five years was selected for the results, while the rest of the information served to summarize the characteristics, foundations, and analysis of encapsulation methods. The information analyzed showed that bioactive compounds (e.g., probiotics, phenolic compounds, fatty acids, and essential oils) can be successfully encapsulated, however, protection will depend on the encapsulation method, wall materials, and operating conditions.
