Sumario:This scientific article aims to analyze food security as a corollary of the human right to food in light of the specialized national and international legal framework, as well as its relationship with poverty in Mexico. A hypothetical-deductive method with descriptive-analytical scope was used where the food situation in the southeast of Mexico (Campeche, Chiapas, Tabasco and Yucatan) was studied through local legal instruments, in the same way reports from international organizations were examined. and statistics to build the relationship between poverty and health effects. The discussion focuses on the guarantee of food security through food as a human right, in turn, with the lack of protection of this, the right to health of people is violated. We conclude that poverty has an intrinsic relationship with food insecurity, which leads to determine that, at present, despite the efforts of international organizations to reduce the gap of human rights violations, in the Mexican State there are still pending countless actions for the due protection of the right to food.
