| Resumo: | This study analyzes the institutional transformations experienced by the world coffee industry in the 20th century through two of the dimensions of global merchandise chains: the institutional framework and geographical location. To do this, three institutional systems are identified and the rules prevailing in the markets of each of these are analyzed. In the last of these systems, the analysis focuses on alternative models created in recent years -fair trade, organic, ecological, specialist, Utz-kapeh and Common Code- and their possibilities as strategies for the development of producers are assessed. |
