| Resumo: | [EN] In this paper the effect of crossing two goat breeds Boer and Murciano-Granadina, on the organoleptic characteristics of meat of suckling kids is studied. To this end it has a herd of 70 goats mating period which was synchronized in two groups. In one stallions breed Boer and other stallion race Murciano-Granadina were used. The pups will be fed by artificial feeding, using a nurse who supplied the milk substitute "ad libitum", with the same composition for all kids. The accommodation will be identical for all of them. When animals reach a live weight of 9 kg will be taken to slaughter. It will be taken from the cold channel the "longissimus dorssi" to perform a sensory analysis by a panel of trained tasters (tenderness, juiciness, woodiness, smells, flavores and acceptance). After the cutting of the canal, several pieces (leg, shoulder, rib and sirloin) for subsequent sensory analysis and consumer acceptance will be taken. |
