Fractionation by steam explosion into solid and liquid phases allowed the separation of phenolic compounds and sugars in the soluble fraction. The hydroxytyrosol extraction yields obtained during acid catalyzed treatment and during treatment without catalyst were compared to those attained with conventional solvent extraction.
