Sumario:Traditional restaurants are not prepared to offer food with delivery service since they are structured to provide service on the premises, thus generating long times in the preparation and delivery of food, exceeding the capacity of their kitchen. A solution to this traditional approach is the phantom kitchens (Dark Kitchen), which allows to attack the segment of order on demand, without having a physical customer service location, helped by a distribution system such as delivery platforms and even being able to more one restaurant at a time, all in the same kitchen. The business plan aims to establish the feasibility of opening a chain of phantom gourmet fast food restaurants, conducting an analysis of the food and beverage industry with a subsequent study of the mixed market, through interviews and surveys. The results show 15 specific characteristics, using the desire to order Italian food as the product base for the financial projections. An analysis of the market, operational and financial needs has been made where the resources, guidelines and mechanisms to be used are determined since, being a digital restaurant, the project seeks to be a company that manages several phantom kitchens with more than one restaurant. . The five (5) year financial projections show positive figures, making it possible to meet growth targets during the same period.
