description Entrepreneur is the one who makes the decision to materialize an entrepreneurial project and provide a service or offer a product. The objective of this research was to investigate how resilient some celayense enterprises were in the food business in their reopening during the Covid-19 pandemic in the 2020-2022 period. This study was developed under a qualitative methodology as a case study and the tool used for data collection was the interview, questions were asked that allowed capturing important information and generated a great contribution to the investigation. The results obtained demonstrate the resistance and perseverance of the entrepreneurs in reopening their business despite the decrease in their sales and the loss of clients; using some new strategies and others based on their experience such as: home deliveries, seeking financing with family members, implementing biosecurity measures, among others.

Esta investigación tuvo como objetivo indagar qué tan resilientes fueron algunos emprendimientos celayenses en el giro de alimento en su reapertura durante la pandemia del Covid-19 en el periodo 2020-2022. Este estudio se desarrolló bajo una metodología cualitativa como un estudio de caso y la herramienta utilizada para la recolección de datos fue la entrevista, se realizaron preguntas que permitieran captar información importante y generara un gran aporte a la investigación. Los resultados obtenidos demuestran la resistencia y perseverancia en los emprendedores en la reapertura de su emprendimiento a pesar de la disminución de sus ventas y la pérdida de clientes; usando algunas estrategias nuevas y otras con base a su experiencia como: las entregas a domicilio, buscar financiamiento con los familiares, implementar las medidas de bioseguridad, entre otras. É empreendedor quem toma a decisão de materializar um empreendimento e prestar um serviço ou oferecer um produto. Esta pesquisa teve como objetivo investigar o quão resilientes foram algumas empresas de Celaya no setor alimentar quando reabriram durante a pandemia de Covid-19 no período 2020-2022. Este estudo foi desenvolvido por meio de estudo de caso qualitativo e o instrumento utilizado para coleta de dados foi a entrevista. Os resultados obtidos demonstram a resistência e perseverança dos empresários em reabrir os seus negócios, apesar da diminuição das vendas e da perda de clientes.
