| Sumario: | The article discusses the trajectory of the Mezcal Appellation of Origin in Mexico, in the contemporary context: the recent extension of the Official Declaration and the updating of Official Mexican Standard 070 (NOM 070). Based on fieldwork in several regions applying anthropological methodologies, we propose to think in Regional Apellations of Origin, to recover the diversity of forms to make mezcal. One way to achieve this is by defining the categories of Artisanal and Ancestral, and in the translation of each one to the regional contexts where these drinks are made. |
