Sumario:Myrciaria cauliflora (Mart) O. Berg is a kind commonly known as jabuticaba. This study aimed to develop liquid and dry extracts containing phenolic compounds from the seeds. For this, we used a Box Behenken planning combined with Response Surface Methodology to optimize the conditions for the extraction of these compounds. The independent variables in the process were the alcohol content (%), extraction time (min) and granulometira particle (mm) and the dependent variable or response was the phenolic content (%). From the optimized condition was designed to extract liquid. In preparing the dry extract was used full factorial design 2 ² and the independent variables were the content of a mixture of additives (%) and drying temperature (° C). The coefficients obtained through the equations generated in the two models were 0.97 and 0.92, respectively. The antioxidant activity was measured by the method of DPPH and that was better than the standard BHT reaching approximately 90% of decolorization. Thus, the set of results showed the potential of seed extracts Jabuticaba as a source of antioxidants.
