Resumo:Spray drying is a widely used method for encapsulation to conserve bioactive compounds, for this reason the drying equipment market has diversified through the development of models of different capacities, sizes, and operating parameters, this allows its use in areas like medical, pharmaceutical and foods, depending on the characteristics of the capsules (e.g., size, morphology, and physicochemical characteristics). The nano spray dryer BÜCHI B-90 is the best equipment on the market with several advantages over other equipment in terms of performance (up to 90%) and particle size (between 0.3 and 5 µm). However, its design made up of a vibrating mesh generates a shear in the solution that recirculates to the feed container, this could affect the thermosensitive compounds. Therefore, the aim of the work was to determine the heat transfer in the feeding container according to the variation of the material and the flow, in a system that simulates the recirculation of a nano spray dryer BÜCHI B-90
