| Sumario: | The conservation of the environment has become one of the main priorities in the agro-industrial sector, taking a great responsibility in the care of natural resources, nutritional quality in food, trends that predominate today, seeing the eyes towards organic products. In this sense, the present thesis shows a study about the importance of Piloncilleros mills as local knowledge in the region and the economic and social advantages that contribute to local development. As in Nayarit, in other parts of the world, the mills are disappearing, the disappearance of this art is due to several factors, changes in the pressure of habit, consumption, culture and development, the difficulty for workers, among other problems that led to the decline and lack of traditional knowledge. |
