| Sumario: | Fruits of pitahaya (Hylocereus undatus haworth) harvested in the state of Yucatán, Mexico, se trasladaron al Laboratory ofScience and Food Technology of Instituto Tecnológico de Mérida. Was evaluated the effect of the composition of atmosphere (AC), temperaturecold storage and time of storage, on some of their characteristics of quality. The experimental design was a random factorial in arrangement2 x 3 x 2; where the factors were the a) temperature of cold storage (4 and 8 °C), b) composition of the atmosphere (3-5: 3 % O2 + 5 % CO2 +92 % N2, 5-5: 5 % O2 + 5 % CO2 + 90 % N2 and Air: whitout AC and c) the time of cold storage (21 and 28 days) with 4 repetitions (5 fruits eachone), have 48 experimental units. The evaluate was 3 days after of and time of exposition of fruit at room temperature (26 ± 2 °C). Four fruitsof each experimental treatment were analyzed and media value was calculated to evaluate the effect of this variables weight loss, damage fruit,content ethanol and acetaldehyde and, respiration of fruit. It was concluded that the temperature and levels of CO2, in function of time of coldstorage influence in the process physiologic of the fruits, when they were transferred to room temperature, increased shelf laif.
