Sumario:The environmental history of food allows us to analyze the socio-environmental practices related to food, understanding them in a spatial and temporal dimension. With the help of disciplines such as ecology, botany, anthropology and history, food systems are analyzed from a transdisciplinary perspective. In this article, the methodology of environmental history is used to study two characteristic foods of the Chihuahuan desert: cabuches and palm flowers (chochas), the analysis focuses on Mazapil, a municipality in the state of Zacatecas and part of the Zacatecas semi-desert. The objective is to analyze the cultural practices around wild edible plants: cabuche and palm flower, ancestral foods of the semi-desert. The article is divided into three parts: Mazapil: “Biodiversity and socio-environmental conditions”, “Caboche and palm flower. Foods from the Chihuahuan desert”, and “Ancestral foods in Mazapil: cabuche and palm flower”.
