description The pectin obtained from agro-industrial residues is an important source of supply, not only because the residues have a significant amount of biopolymer, but it is also a way of taking advantage of biological waste from agro-industries that generally become pollution problems for the environment or that its final disposal under adequate treatment increases production costs. Due to its thickening, gelling, stabilizing and biodegradability properties, it can be used agriculturally, in the food, cosmetic and pharmaceutical industries. For its use there is a variety of extractive methodological procedures and variants within each procedure. The objective of this review was to collect and analyze information on the industrial methods of extraction of this highly demanded raw material, focusing on the extractive phase and parameters with the greatest influence on the yield and quality of pectin extraction in fruits. The results indicate that the chemical method of acid hydrolysis without assistance was the most applied for pectin extraction, using mainly hydrochloric acid as extractive solution, applying a temperature of 90 °C and pH between 1 and 2.2, as well as a time of 60 minutes. The extractive process is strongly influenced by the values and combinations of values of the extracting solution used, the temperature at which the hydrolysis is carried out, the pH with which the process is carried out and the duration of the extraction. These factors determine the quality and yield of the pectin obtained.

These factors determine the quality and yield of the pectin obtained.La pectina obtenida de residuos agroindustriales es una importante fuente de abastecimiento, no solo porque los residuos tienen una importante cantidad del biopolímero, sino que también es una forma de aprovechar los desechos biológicos de las agroindustrias que generalmente se convierten en problemas de contaminación al ambiente o que su disposición final bajo un adecuado tratamiento incrementa los costos de producción. Debido a sus propiedades espesantes, gelificantes, estabilizantes y biodegradabilidad puede emplearse a nivel agrícola, en la industria alimentaria, cosmética y farmacéutica. Para su aprovechamiento existe una variedad de procedimientos metodológicos extractivos y variantes dentro de cada procedimiento. El objetivo de esta revisión fue recabar y analizar información sobre los métodos industriales de extracción de esta materia prima altamente demandada, centrándose sobre la fase extractiva y parámetros de mayor influencia en el rendimiento y la calidad de la extracción de pectina en frutos. Los resultados indican que el método químico de hidrólisis ácida sin asistencia fue el más aplicado para la extracción de pectina utilizando como solución extractiva principalmente el ácido clorhídrico, aplicando una temperatura de 90 °C y pH entre 1 y 2.2, así como un tiempo de 60 min. El proceso extractivo es fuertemente influido por los valores y las combinaciones de valores de la solución extractante utilizada, la temperatura a la que se realiza la hidrólisis, el pH con el que se realiza el proceso y el tiempo de duración de la extracción.
