Sumario:In Mexico, chorizo is considered a raw sausage, obtained from a mixture of minced meat and pork or pork and beef and bacon and / or pork fat, added salt, pepper, garlic, chili and authorized additives, which should be included in the labeling. The objective of this work was to analyze and compare the nutritional content of different chorizo ​​brands by reading labels of products sold from supermarkets in the city of Pachuca, Hidalgo. Chorizo ​​is considered a fatty food, according to the labeling they presented contents between 7-34 g / 100 g of product and with a protein contribution between 9-15 g / 100g so it is not considered a source of protein. These products have additives such as nitrites and nitrates, as well as a high sodium content, which is why moderation in the consumption of these products is important.
