Anthocyanins were isolated from maize using the combination of column chromatography and HPTLC plates, whereas HPLC-UV/Vis and HPLC-MS were used for analysis and identification. Compounds found include the glycosides Cyanidin, Peonidin, and Pelargonidin, while HPLC profile revealed that the most abundant anthocyanin was Cyanidin-3-(6-malonyl-glucoside), a malonic derivative of Cyanidin.
