Resumo:Until now, the demand imposed on Sial’s products has not been addressed properly even though the rating process of these products has a link on the representations of the quality of consumers. This article intends to address this issue by using some past studies contained in a representative set of contributions of the Sial in Latin America since the beginning of the present century. It will determine whether such studies provide a vision consistent with the socioeconomic characteristics of potential consumers. In addition, this article suggests that these elements are inclined to a strong demand for an urban middle class, in part through tourism, which is characterized as an element of a “rurality demand”. It discusses the impact that this form of demand on territorial development carried out by the Sial, such as on their contribution to a more sustainable food consumption.
