Sumario:[EN] In this paper, we present the various methods used for harvesting during the Neolithic period. In order to put forward a hypothesis about the origin of agricultural practices, it is important to assess the degree of domestication of cereals, analyzing the state of their maturity. Based on the analysis of the distribution and texture characteristics of the polish from the cereals, we can understand how the plants were collected. This may be due to different strategies for the use of agricultural crops.
