Sumario:The dataset includes the visible and near infra-red spectra (361-2249 nm) of a sampleset of olive oils comprising 70 samples of Extra Virgin Olive Oils (EVOO) from special gourmet markets, 24 EVOO, 5 virgin olive oils (VOO) and 40 non-virgin olive oils (OO) from common markets, 45 EVOO along with 10 VOO from a collaborative industry and 31 EVOO samples from a research project. These last extracted at the Instituto de la Grasa (CSIC, Seville) from olives using a laboratory mill MC2, based on the Abencor system. The olive oil samples inlcuded are 225 in total. The samples were filtered by using filter paper (158.24 g/m2).
