A wide range of different materials, as well as several osmotic agents were tested. The obtained results show that the use of ultrasound always accelerates the investigated processes. The application of ultrasound may reduce the energy consumption of drying. Qualitative studies of dried materials do not give a definite answer about the effect of ultrasound on the quality of the products. Mathematical modelling of the ultrasound assisted drying indicates that so named “vibration effect” plays the biggest role in convective drying acceleration. This work was carried out as a part of research project No 03/32/DSPB/805 sponsored by Poznań University of TechnologyEditorial Universitat Politècnica de ValènciaPoznan University of TechnologyRepositorio Institucional de la Universitat Politècnica de València Riunet20182018-09-07book parthttp://purl.org/coar/resource_type/c_3248VoRhttp://purl.org/coar/version/c_970fb48d4fbd8a85info:eu-repo/semantics/bookPartapplication/pdfhttps://riunet.upv.es/handle/10251/117398reponame:RiuNet.
