Sumario:The aim of this thesis has been the development of a fast analytical method based on the FT-MIR spectroscopy to determine the phenolic ripening state of red grapes and to fix the harvest date. For this purpose, several PLS calibration methods were developed which allow the simultaneous quantification of different phenolic compounds in grape extracts in a fast a reliable way, using the UV-Vis spectrophotometry as reference technique. To get representative extracts which can be used as calibration standards, a sampling which covers the maximum natural variability of grape took place and a fast and efficient extraction method was optimized, whose ability to predict the wine characteristics was checked by microvinification assays.
