Sumario:Dunaliella salina (Chlorophyceae) is a microalgae that have a considerable percentage of pigments, especially it accumulates significant levels of β-carotenes; compounds that possesses high antioxidant control. In this investigation, the antioxidant capacity of a vegetal oil of soya enriched with D. saline was evaluate. The biomass of a hypercarotenogenic of D. saline (selected previously); it was mixed and macerated with the eatable vegetable oil. Subsequently, the oil was filtered and stored to 23±1°C during 28 days. The content of β-carotene, as well as the antioxidant activity, of the oil enriched with the microalgae were quantified during diverse storage periods (0, 7, 14, 21 y 28 days), in contrast with a control oil and mixture with a referential antioxidant. The results evidence that the eatable oil treaty with biomass of D. salina maintain contents of β-carotene of 2,1 µg/L and an antioxidant activity of 45,6% in contrast to the control oil. This investigation demonstrated the antioxidant potential of eatable vegetable oil enriched with D. salina, suggesting the use as alternative to improve the useful life of vegetal oils.
