In the project it was established that the methodology to be applied is quantitative, since its main characteristic is the collection of data to demonstrate the viability of the project, for which 384 surveys were used in the city of Ambato. The feasibility of the project has been demonstrated through the financial evaluation with which the following was determined: the initial investment is $12,702.09, the net present value is positive $3,220.40, the internal rate of return is 22%, it exceeds the WACC which is 13.14%, and the investment will be recovered in 2 years and 11 months; On the other hand, the sensitivity analysis showed that the minimum price to maintain a positive NPV could be $2.55, producing 21,000 products annually.La presente investigación tiene como objetivo desarrollar un proyecto de factibilidad para la creación de una cafetería “Café Victoria” en la ciudad de Ambato, por lo que se realizó un estudio de mercado evidenciando las necesidades, gustos y preferencias del mercado potencial; se aplicó el estudio técnico para mostrar los procesos establecidos con la finalidad de acortar los tiempos de atención y la capacidad instalada para optimizar todas las instalaciones; además se desarrolló el análisis de manejo financiero en que se evidenció los principales rubros de la cafetería y la evaluación financiera para mostrar si es o no rentable el proyecto. En el proyecto se estableció que la metodología a ser aplicada es cuantitativa, ya que su característica principal es la recolección de datos para demostrar la viabilidad del proyecto, por lo que se empleó 384 encuesta en la ciudad de Ambato.
