Sumario:The present research work carried out in the Latacunga Municipal slaughterhouse emphasized the evaluation of the slaughter process and its incidence on productivity through good manufacturing practices for the cattle, pig and sheep slaughter line that are components of the two variables, emphasizing the quantitative approach taking into account certain indicators that generate productivity within the production process, through the statistical analysis of these data allowed to verify the incidence on productivity, the instruments such as the interview guides that were carried out to the Administrator of the slaughterhouse, Director of AGROCALIDAD and the veterinarian, the questionnaire for the slaughterhouse workers and the introducers was also used, in order to obtain the necessary answers that allowed the analysis of the two variables, Independent and Dependent
