| Sumario: | The nutrition is one of the human needs. The ways of preparation, which include the cooking has changed throughout thetimes, it goes from the “pachamanca”, the wood fire up to currently the induction kitchens. Nowadays nevertheless any dishprepared are using some ancestral technics and are well fancied; among these technics we could mention the cooking in thewooden fire, wood oven, the use of ceramic pots or bronze pots.The Imbabura Province is located at the northern part of Ecuador, it is well known for preserving traditions such as cookingtechnics and the use of ancestral utensils for cooking. In some places as Otavalo or Natabuela in special occasions still makethe “pachamanca”. The use of these technics or utensils have permitted to this province be awarded for the recognition oflocal and foreign people, and receive the preference of its citizens, visitors, tourists when they have to select a place to eat. |
