Resumo:Continuous and intermittent frying processes cause physical and chemical changes in oil, affecting the nutritional and sensory quality of fried food, which may cause damage to consumers' health. This study aimed to analyze the quality of frying oil in seven tents of free markets located in São Caetano do Sul. The oil quality was monitored twice, at the start and at closing times of the street markets, showing changes in the oil degradation level. This was measured using a fat and oil quality monitor, which showed lack of control of the frying oil used in street markets.
