Sumario:Food is a physiological need of human beings, it gives us energy to do the various activities of the day besides being an activity extremely linked to pleasure. The University Restaurant at UFMG serves thousands of meals during the weekdays. Students, servants teachers among others seek to satiate their hunger every day in this institution seeking a balanced and quality food, in addition to low cost. Thus, this study seeks to evaluate the antecedents of satisfaction of the users of the "Bandejão" of the UFMG of the Pampulha campus. In order to evaluate the perception of the academic community in relation to the University Restaurant, a survey was conducted, with a structured questionnaire based on affirmations with a Likert scale of 11 points. This questionnaire, applied to 216 people through the google forms platform and in person within the teaching institution itself, aimed to assess how the academic community perceives satisfaction as well as what factors make people have lunch in the university restaurant. These analyzes were done using statistical methods using SPSS and SmartPLS software. The results demonstrated that the Perceived Value, Food Quality and Environment constructs should receive attention from those responsible for customer satisfaction and maintaining the good status quo with the academic community.
