The field of analysis was the tourist region “Uva e Vinho” - Serra Gaúcha, specifically the gastronomic  souvenirs sold in the train ride station “Maria Fumaça” in Bento Gonçalves/RS. Thus, this research is characterized, methodologically, as exploratory as to its objectives; the technical procedures predominates the case study; since data collection was carried out through a semi-structured interview. Finally, the data were analyzed using the triangulation method. The results show that some producers of gastronomic souvenirs value, preserve and promote the local culture through the redemption proceeds and production methods; in crafting, in small quantities, restricted access to the tourist area “Grape and Wine”, among others.
