Sumario:Based on the cosmopolitan ethnography or macroethnography (Appadurai, 1996), that focuses on the impacts of deterritorialization on the imaginative resources experienced in life, this research is developed from a contemporary context in which local experiences are inserted in global gastronomic habits and then transformed. So, the culinary, from a delimitation of hybrid practices in Cuiabá, represents the tool to comprehend the dynamics and processes of contemporary intercultural relations. These dynamics arise from a multiple scenario characterized by features of the state’s capital of Mato Grosso (the migratory flows in the twentieth century and the globalization flows at the end of that century up to the present moment), that allowed to think hybridism (Canclini, 1996) in order to create dishes that associate a local ingredient with others which ideas relate to a global consumption. To embrace this interdisciplinary research, the eight selected hybrid dishes work as examples to intercultural realities (Canclini, 1996) of the cities and to culinary practices by the clarification of questions that perpass actual notions of in-between (Lopes; Santiago), place (Massey; Tuan), space (Massey), habits of consumption (Lipovetsky; Campbell), cultures (Canclini; Glissant) and possible processes of legitimation.
