| Sumario: | Maté is a product consumed mostly in natura, and must, therefore, be free of insect or extraneous material in order to guarantee its quality. In order to compare the sanitary quality of the maté produced by two different cultivation systems, (native and high tree density), processed leaves wereanalyzed by the flotation method. A commercial sample was used for comparison; the test was done inthree replicates. Adult insects, larvae, mites, and rodent hairs, for which tolerance is zero, were recoveredfrom the samples. Insect fragments also exceeded the standard established by the Ministry of Health,which is 10 fragments/10 g. The commercial maté presented the highest levels of insect fragments (73,3fragments/10 g); followed by the samples from the 1st and 2nd pruning from the dense area (66,3 and 38,3)and the 1st and 2nd from the native (34,3 and 23,3). Thus, all samples were low grade and should be rejected. Rigorous sanitation measures, from harvesting through processing, must be adopted in order to keep the sanitary quality of the product. A revision of current quality standard is also required to adapt thecontaminant limits to the reality of the maté production chain. |
