| Resumo: | Brazil is currently experiencing a serious threat to food sovereignty and a critical worsening of food insecurity. In view of this situation, we aim to understand how the academic community of bachelor graduates of Gastronomy in Brazil comprehend Food and Nutritional Sovereignty and Security in their curricula, as well as their concerns regarding this scenario. Qualitative interviews with students, professors and graduates. Regarding teaching dimension, the food and nutritional security and sovereignty (FNSS) activities were perceived as shallow in formative experiences while extension activities presented most of its practices associated with FNSS. However, the effective approximation between Gastronomy and FNSS relies on redefinition of concept and epistemology of Gastronomy. |
