Sumario:Apiculture pollen may present variations in its chemical composition, mainly due to abiotic factors, which may directly influence its nutritional quality. In this context, the objective of the present study was to characterize the polifloral pollen collected by Africanized bees (Apis mellifera L.) in the region of the Cariri region of Ceará through physicochemical analyzes during a one-year period. Samples of bee pollen were analyzed for the parameters: protein, ash, moisture, lipids and total sugars. Mean values were 26.43% protein, 2.56% for ash, 13.72% for moisture, 7.57% for lipids, and 29.14% for total sugars. All the analyzed parameters met the standards of the Technical Regulation for Identification and Quality of Beekeeping pollen established by the Ministry of Agriculture. The results showed that there was a great oscillation in the data during the months studied and could be related to local environmental factors or to the storage in which the pollen samples were submitted. However, it is possible to conclude that the bee pollen studied can be considered nutrient-rich foods. With considerable levels of proteins, lipids and sugars.
