| Resumo: | The agricultural foundation of Brazilian economy makes it possible to identify a large contingent of rural territories with different characteristics and conformations. Coffee growing emerge as one of the most important productions in the country. It is explored throughout the territory, making Brazil the world's biggest producer and the second one in consumption. In this sense, the formation of a coffee culture is supported by the production, consumption and formation of rural landscapes. It aimed to identify the formation of a Coffee Architecture in Caparaó, Espírito Santo, from rural territorial systems and processes, analyzing historical factors of the insertion of coffee in the region and perspectives of effective consumption of specialty coffees. A qualitative, exploratory, descriptive, analytical study was conducted through the Process-Oriented Research Method (POP Method), using field research and participant observation as the main methodological procedures, as well as documentary and bibliographic investigations. The research was divided in the following themes: history of coffee culture in Caparaó, differentiation of the national and international specialty coffee market, as well as consumption perspectives. As a result, it is possible to point out a panorama of Coffee Architecture in Caparaó Espírito Santo, evidenced by small rural properties, family farming, agroecological production and terroir that ensure the coffee production of excellence.
