Sumario:[EN] The first results of a research into the history of wheat and wheat mills in Mexico during colonial times, one of the chapters of a larger project on the "History of hydraulic technology during colonial times" are exposed. In this context, the case of mills established in Oaxaca, particularly in the High Mixteca region, is presented. The information comes primarily from studies of various contemporary authors, published historical sources, archival documents and maps from the colonial times.
